Ingredients

  • 4 pints fresh gooseberries 
  • 1 cup water
  • 6 cups white sugar
  • 6 fluid ounces liquid fruit pectin

How to make it

1. Prepare gooseberries by removing blossom and stem ends from berries.

2. Mash berries in food mill or with a potato masher in a large pot.

4. Pour 4 cups of mashed berries into a large saucepan and stir in the sugar. Bring to a hard boil for 1 minute over high heat stirring constantly. Remove from heat and stir in the pectin immediately.  Skim off any foam with large spoon.

5. Ladle the jam mixture into sterile 1/2 pint jars, filling each within 1/4 inch of the top. Wipe the jar rims with a clean cloth. Seal each jar with new sterile lids and rings.  

6. Process covered in a bath of simmering water for 10 minutes.
