Ingredients

  • ⅓ cup vegetable oil
  • 1 cup granulated sugar
  • 2 eggs, lightly beaten
  • 1 ½ cups mashed bananas, about 3 large overripe bananas
  • ⅔ cup sour cream
  • 1 ½ teaspoon vanilla extract
  • 2 ½ cup flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1 ½ cup blueberries, fresh or frozen

How to make it

1. Preheat the oven to 325 degrees Fahrenheit and spray two 9×5 bread pans with pan spray.

2. In a large bowl mix the oil and sugar together until combined. Add in the eggs and mix until light and fluffy, about 2 minutes.

3. Stir in the mashed bananas, sour cream, and vanilla until combined.

4. In a medium bowl, whisk together the flour, baking soda, and salt. Remove one tablespoon of the flour mixture and toss it in a small bowl with the blueberries.

5. Add the flour mixture to the wet ingredients and mix on low until just combined. Fold in the blueberries by hand.

6. Separate the batter evenly into the two prepared pans and bake for 50-60 minutes, until a toothpick comes out clean. Let the loaves cool for 30 minutes before slicing.
