Ingredients

  • 1 French baguette, sliced into 1/2-inch diagonal slices
  • 3 Tablespoons olive oil
  • 2 – 4 oz. logs of goat cheese at room temperature
  • 4 oz. black currant chutney (see recipe)

How to make it

1. Brush both sides of the baguette slices with olive oil and toast in a toaster oven or under an oven broiler until golden brown, turning to toast both sides.

2. While the toasts are still warm, spread each with a generous spoonful of goat cheese.  Top with a dollop of currant chutney and serve.  Refrigerate any leftovers.
